About Cappadocia
Cappadocia is a surreal landscape sculpted over millions of years by volcanic erosion. Eruptions of Mount Erciyes and Mount Hasan covered the region in ash and tuff, which wind and rain then carved into the famous fairy chimneys, picturesque valleys and rock formations that look like another planet.
But Cappadocia isn't just geology: it is a land with more than 5,000 years of human history. Hittites, Persians, Romans and early Christians dug underground cities, rock-cut churches and monasteries into the soft stone. The Göreme Open-Air Museum, a UNESCO World Heritage Site, preserves breathtaking 10th-century Byzantine frescoes.

What to See in Cappadocia
Hot-air balloon flight
Cappadocia's signature experience. At dawn, hundreds of colourful balloons rise over the valleys, creating a dreamlike scene. The flight lasts about an hour and passes over fairy chimneys, valleys and villages carved into the rock. Book well in advance, especially in high season.

A UNESCO World Heritage Site, this 10th-century rock-cut monastic complex contains churches carved into the stone with remarkably well-preserved Byzantine frescoes. The Dark Church (Karanlık Kilise) has the most impressive ones, as the lack of light protected them for centuries.

Cities dug underground, up to 8 levels deep, that sheltered thousands of people. They include stables, wine cellars, churches, kitchens and ventilation systems, and served as a refuge for early Christians during invasions. Derinkuyu goes down to 85 metres below ground.

One of the most beautiful valleys in Cappadocia for hiking. The rock formations turn pink at sunset, and the trail winds between fairy chimneys, hidden rock-cut churches and vineyards. The walk from the Göreme viewpoint takes about 2 hours.

Food in Cappadocia
Cappadocian cooking is rustic and delicious. The star dish is testi kebab (pottery kebab): lamb and vegetables slow-cooked inside a sealed clay pot that is broken open at the table to serve. It's a real culinary show.
Other essentials are mantı (Turkish dumplings with yoghurt and tomato sauce), tarhana soup, gözleme (flatbreads filled with spinach, cheese or meat) and bread baked in a tandır (earth oven). Cappadocian wines, made from native grapes such as Emir and Öküzgözü grown in volcanic soil, are an excellent surprise.
Don't leave without trying kayısı tatlısı (apricots stuffed with cream): Cappadocia and the surrounding region produce some of the best apricots in the world.
Practical Tips
- Book your balloon flight well in advance. Flights are cancelled for wind or rain, so allow at least 2 mornings in case of a cancellation.
- Wear comfortable shoes: the valleys and underground cities mean walking on uneven ground.
- The best sunset viewpoints: Lovers Hill in Göreme, the terrace of Uçhisar Castle and the Red Valley viewpoint.
- Cave hotels are a unique experience but can be cool: caves keep a constant temperature of 15–18°C.
- If you visit in winter (December–February), the snowy landscape is magical and there are far fewer visitors. Balloons fly all year round.
- Try a quad-bike or horse-riding tour through the valleys as an alternative to hiking.
Getting There
Cappadocia has two airports: Nevşehir (NAV) and Kayseri (ASR). Kayseri has more flights from Istanbul (1 h 20 min). From both airports there are shuttle services to hotels in Göreme, Ürgüp and Uçhisar (about 45–60 min).
From Istanbul you can also travel by overnight bus (about 10–11 hours), a budget option that saves you a night in a hotel. The main companies are Metro Turizm and Süha.
If you're driving, the motorway from Ankara takes about 3.5 hours. I arrange private transfers from the airports as well as transport between destinations, so your trip is comfortable and hassle-free.
