A 7-day trip to Türkiye is the perfect way to see the essentials of the country without rushing. In a week you can explore Istanbul, fly to Cappadocia and still have time to enjoy each place properly. Here is my day-by-day itinerary to help you make the most of it.
Itinerary: Türkiye in 7 days
Days 1–3: Istanbul — the city between two worlds
We spend the first three days in Istanbul, the city that joins Europe and Asia. This is the plan:
- Day 1: Arrival and a first taste of the city. A walk around Sultanahmet: Hagia Sophia, the Blue Mosque, the Hippodrome and the Basilica Cistern. Dinner at a restaurant overlooking the Sea of Marmara.
- Day 2: Topkapı Palace in the morning, the Grand Bazaar at midday, then the Spice Bazaar in the afternoon and a Bosphorus cruise at sunset.
- Day 3: Characterful neighbourhoods: Balat, Fener and the Süleymaniye Mosque. In the afternoon, cross to the Asian side to explore Kadıköy and enjoy a Turkish tea by the Bosphorus.
Day 4: Fly to Cappadocia
Morning flight from Istanbul to Kayseri or Nevşehir (1 h 15 min). Transfer to Göreme. In the afternoon, visit Pigeon Valley and Uçhisar. Dinner in a cave restaurant with views over the valley.
Days 5–6: Cappadocia — out-of-this-world landscapes
- Day 5: Sunrise hot-air balloon flight (book well in advance). Göreme Open-Air Museum, Love Valley and Rose Valley. A pottery workshop in Avanos.
- Day 6: Derinkuyu Underground City, Ihlara Valley (a 4 km walk along the river) and Selime Monastery. Free evening in Göreme.
Day 7: Heading home
A last stroll around Göreme, some souvenir shopping and the flight back to Istanbul to connect with your international flight.
Getting between cities
The domestic flight from Istanbul to Cappadocia is the most practical option (from around €40–60 at the time of writing, 2026). Turkish Airlines and Pegasus operate several flights a day. You can also go by bus, but it is a 10–11-hour overnight journey.

An alternative 7-day route: Istanbul, Cappadocia, Konya, Pamukkale and Ephesus
Seven days is the minimum I recommend to see the real diversity of Türkiye beyond Istanbul. If you prefer to cover more ground, this route takes in three regions and three completely different landscapes.
Days 1–2 — Istanbul
Day 1: All of Sultanahmet — Hagia Sophia, the Blue Mosque, the Hippodrome and the Basilica Cistern. In the afternoon, Topkapı Palace and its gardens overlooking the Bosphorus and the Golden Horn.
Day 2: Morning cruise on the Bosphorus (palaces, fortresses and yalı waterfront mansions). Afternoon at the Grand Bazaar and the Spice Bazaar. Climb up to the Süleymaniye Mosque for the best panorama of the city. Dinner at a meyhane in Beyoğlu.
Days 3–4 — Cappadocia
Day 3: Morning flight to Kayseri (1 h 15 min). Göreme Open-Air Museum, Monks Valley and a pottery workshop in Avanos. Sunset from Uçhisar Castle. Night in a cave hotel in Göreme.
Day 4: Sunrise balloon flight (weather permitting). Derinkuyu Underground City. Love Valley and Pigeon Valley. Dinner of pottery kebab (testi kebabı) in a cave restaurant.
Day 5 — Konya
Drive to Konya (about 3 h) across the Central Anatolian plateau. Visit the Mevlana Museum (Rumi's tomb), the Alaeddin Mosque and the historic centre. On Saturday evenings you can usually watch a whirling dervish ceremony (check the time before you go).
Day 6 — Pamukkale
Drive to Pamukkale (about 4 h). Its white travertine terraces are a UNESCO World Heritage Site, where thermal water at around 35 °C flows through natural stepped pools. Visit ancient Hierapolis: the Roman theatre, the necropolis and the option of a swim in Cleopatra's Pool, among submerged Roman columns.
Day 7 — Ephesus and back to Istanbul
Morning at Ephesus (about 3 h from Pamukkale): the Library of Celsus, the Great Theatre, the Terrace Houses and the Temple of Hadrian. Visit the House of the Virgin Mary. Evening flight back to Istanbul from Izmir (about 1 h).
